1 pound trout, salmon or other medium-firm fish (tilapia, cod, cusk, grouper, haddock, sea bass, snapper, mackerel, etc)
1/4 c butter
1/4 c sliced almonds
1 medium onion, sliced
1/2 c all-purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon pepper
2 oranges, peeled and sectioned for garnish
If fish fillets are large, cut into 5 servings.
melt butter in skillet and cook almonds and onion in butter, stirring occasionally, until onion is tender, remove almonds and onion with slotted spoon; keep warm.
Mix flour, salt, paprika and pepper. coat fish with flour mix. cook fish in same skillet over medium heat 6-10 minutes, turning once, until fish is brown and flakes easily with fork.
Top fish with almonds and onion. garnish with oranges.
